Kohlrabi is a Brassica vegetable, also known as the "cabbage turnip," with a crunchy, juicy, sweet, and mild flavor similar to broccoli stems or a sweet radish. It's not a root vegetable but rather the engorged stem of the plant, and both the swollen bulb and the green leaves are edible. You can eat kohlrabi raw in salads or snacks, or cook it by roasting, steaming, grilling, or stir-frying.
How to eat it (more tips here on how to cook it)
Raw: Slice it thin for salads, cut it into sticks for a snack with dip, or grate it.
Cooked: Roast, steam, stir-fry, or grill it.
Leaves: The leaves are also edible and can be cooked like spinach or kale.
