Jerusalem Artichokes

Jerusalem artichokes, or sunchokes in America, have a nutty, earthy flavour. Nobbly on the outside, they look a bit like ginger or turmeric root but are actually a versatile root veg that can be roasted, boiled, mashed or pureed.

They are not the same as globe artichokes (nor are they from Jerusalem) but they are delicious and well worth a try if you haven’t before.

At Very Local Food Hubs we enjoy chopping them and chucking them in to a tray of beetroot and carrots, drizzling with oil and a little salt and roasting them for a side dish to a roast dinner. Jerusalem Artichoke soup is popular too and the nutty creamy texture makes a great smooth soup. A lot of our go-to recipes actually just consist of drizzling some oil on the veg and enjoying with a sprinkle of salt and lemon - it’s really that simple. Let the veg do all the work!
